RaffaellRaw – Creamy Coconut-Almond Bliss (Vegan Bites)

Voilá — here’s the raw and, as always, completely free-from Raffaello! Or as we like to call it: RaffaellRaw :) A super tasty vegan treat. We first made this after a summer hike in the Dolomites — where, to our surprise, we woke up to 20 cm of fresh snow overnight…
I was so inspired by that snowy surprise that when we got home, I created a little “snowball” dessert. I’ve always loved Raffaello, so I set out to make a healthier version — and after a bit of experimenting, it finally came together!
Ingredients (makes about 7–8 balls):
35 g almond flour
30 g shredded coconut
25 g maple syrup or rice syrup (use honey if not making it vegan)
50 g Mendula almond butter
7–8 whole blanched almonds
For rolling: more shredded coconut
Simply mix all the ingredients together in a bowl, form into balls, and place a whole almond in the center of each one. Then roll them in shredded coconut to coat.
