One of our favorite nut butter-based treats is the classic pudding or dessert cup. It’s super easy to make and always a hit — whether you’re making it for kids or serving it to guests. If you’re looking for a quick and impressive dessert, try the base recipe below and mix and match ingredients to suit your taste!

Vegan Dessert – Creamy Delights with Mendula Nut Butters

The base of this heavenly vegan dessert is 400–500 ml of plant-based milk, cooked into a pudding with 40 g of cornstarch, cane sugar, and vanilla. Stir your chosen nut butter into the hot mixture once it's done. If you'd like to make layered desserts, divide the pudding at this point and mix cocoa powder into one half instead of nut butter for a flavor contrast.

If you don’t feel like cooking, prep the dessert the night before: shake together plant-based milk, cane sugar, and vanilla in a jar with a few spoonfuls of nut butter and half a cup of chia seeds. Let it rest in the fridge overnight until the seeds soak up the liquid and turn into a thick, silky pudding.

With these basic layers, you can whip up dessert cups in minutes. You’ll often find everything you need in your pantry or freezer — but with fresh fruit, your creations will be even more delicious and nourishing. Add crunch between layers with our granolas or crushed oat biscuits, or sprinkle in chopped nuts and chocolate chunks for extra indulgence.
