Homemade Salad Dressing – with Mendula Nut Butters

These smooth, lightly nutty spreads elevate even the simplest leafy greens to a whole new level. Add extras like avocado, seeds, cheese cubes, hard-boiled eggs, or tuna, and you’ll have a satisfying, wholesome main course in no time.

Homemade Salad Dressing – with Mendula Nut Butters

Freshly made salad dressing is always best! For a base recipe, mix 2 generous tablespoons of almond or hazelnut butter with 120 ml olive oil or grapeseed oil, 2 tablespoons of quality balsamic vinegar, and 1 tablespoon of honey. Season with salt and pepper, then blend until smooth using an immersion blender. It keeps well in the fridge. For a vegan version, swap the honey for maple, rice, or date syrup! This basic mix can be customized in countless ways — add Dijon mustard or garlic for a bolder flavor. You can also give it a whole new character by using apple cider or other fruit vinegars instead of balsamic.

For Asian-inspired flavors, use our creamy or crunchy peanut butter. Add rice vinegar, soy sauce, sesame oil, and lime juice. Sweeten with agave syrup or your preferred sweetener, add ginger and garlic, and turn up the heat with a touch of chili. If the dressing is too thick, simply add a splash of water so it coats every leaf perfectly.

These dressings are also great for veggie-packed Buddha bowls — combine raw veggies with steamed or grilled ones, and add a few spoonfuls of whole grains for a satisfying, well-rounded meal.
