Healthy Pancakes – with Mendula Nut Butters

Healthy Pancakes – with Mendula Nut Butters

Every child loves pancakes. And most adults too. With our healthy pancake ideas, we’d like to inspire and offer tips so you can sneak fresh fruits and nuts into this popular dessert and gently guide your family toward more mindful eating.

If you love the American-style pancake, try replacing some of the usual butter or coconut oil in the batter with almond butter. We were blown away by the difference! And if you use green banana flour instead of traditional grains, you’ll have a perfectly healthy breakfast option for your kids. Top warm pancakes with a spoonful of nut butter, a few drops of maple syrup, and a sprinkle of fresh fruit and seeds.

You can fill the classic thin crepes and roll them, fold them into triangles, or even create layered pancake cakes — any version is guaranteed to be a hit! Feel free to play with the fillings!

Our Deluxe hazelnut spread pairs beautifully with toasted coconut, sliced bananas, or fresh strawberries — it’s irresistible even with strawberry jam. Be sure to try the vegan version too! Top these healthy pancakes with a scoop of ice cream, drizzle with melted chocolate, and sprinkle with chopped hazelnuts — pure sweet temptation.
Pair our 100% hazelnut butter with raw apple or pear, or go for spiced pumpkin purée, cinnamon-steamed apple, and of course, anything chocolatey (in case you’ve run out of Deluxe hazelnut cream).
Both the 100% and the cinnamon almond butter are perfect bases for fruity, dark chocolate, or creamy pudding-style fillings. Add some crunchy almond pieces to balance the soft texture.
For cashew butter, try tropical fruits — pineapple, coconut, mango, and papaya make a wonderfully exotic combo! But local summer berries like cherries, sour cherries, or even peaches also go great with the pleasantly vanilla-flavored, naturally sweet nut cream.

Combine peanut butter with banana and chocolate, and take it up a notch with a salted caramel drizzle — and trust us, you won’t want to share your pancake!
