Paleo Bread – A Healthy Breakfast

It's a dream on its own, but I always boost it with a little homemade jam or peanut butter. If you're like me and can't stomach savory foods in the morning, but you want to watch your figure and health, I suggest you start making this NOW!
Ingredients:
- 200 g almond flour
- 40 g desiccated coconut
- 1 tsp baking soda
- 1 tsp vanilla extract
- ½ tsp cinnamon
- 70 g melted coconut oil
- 50 g maple syrup
- 100 g grated carrot
- 50 g raisins
- 1 medium apple, grated
- 50 g Mendula almond butter
- 1 medium banana, mashed
- 40 g walnuts
- In one bowl, mix the dry ingredients: almond flour, desiccated coconut, baking soda, and cinnamon.
- In another bowl, mix the wet ingredients (egg, coconut oil, maple syrup, vanilla, almond butter), then add the grated apple and carrot, banana, and raisins.
- Pour the batter into a greased loaf tin about 30 cm long, sprinkle the top with walnuts, and bake at 170°C until a toothpick inserted into the center comes out clean.
If you want to make it even better, add some Mendula peanut butter on top. Be warned, it’s seriously addictive, so don’t start with a small portion—you won't want to miss out! This is a healthy breakfast you can easily fit into your weekly routine.
