Pumpkin Seed ButterSmall but mighty—pumpkin seeds offer a wide range of health benefits. They’re especially rich in protein: 100 g of pumpkin seeds contain 28.5 g of protein. They’re also loaded with fiber, vitamin K, phosphorus, magnesium (one of the best natural sources!), and zinc. They’re a great source of antioxidants such as carotenoids and vitamin E, which help reduce inflammation and protect your cells. Unlike pumpkin seed oil, our pumpkin seed butter retains all the fiber content of the seeds as well. We lightly roast the seeds to bring out their flavor, then grind them into a smooth cream with a touch of sea salt. From there, it’s up to your imagination how you’ll enjoy it! You can spread it in any sandwich as a substitute for butter. Our suggestion: take a slice of good-quality (sourdough) bread, add 1–2 teaspoons of pumpkin seed butter, top with cottage cheese, a few slices of tomato, and finish with some arugula or baby spinach—and just like that, you’ve got a super tasty, protein-rich, and healthy breakfast.
